Savory Apple Cheddar Doughnuts(Donuts?)

It has been fun playing around with recipe videos! I have learned so much! It has really made me appreciate how much work goes into all the creative recipe videos I see as I quickly scroll through social media.

The theme for this months #letsberealmeals project was apples! The ultimate fall fruit. When I think of apples the first flavor ideas that come to mind are cinnamon, oats, brown sugar, pastry and of course vanilla (preferably in ice cream form!)

When creating a recipe for this months theme I decided I wanted to try a savory approach with apples. So the first ingredient that came to mind when I thought of a savory and apple was cheddar cheese! Anybody else go there?!!! Or am I the only one?

One of my favorite kitchen gadgets is my doughnut pan! You can pretty much take any muffin recipe and make it into a donut. Donuts just make food way more delicious, and eating a million times more fun! Am I right?!!!! I love donuts! But donut worry if you donut have a donut pan you can use this same recipe to make muffins (haha! see what I did there??? Sorry I have my dad's sense of humor!). You can just sprinkle the pistachios on the top of muffin before baking.

Also on a side note, until I started writing this blog I realized that I just automatically spell donut like dunkin donuts. My spell check started yelling at me! After some research I found this fun article from the Huffington Post on the great donut/doughnut spelling debate! How do you spell donut/doughnut?

Anyways off topic, back to savory donuts, or this could be a whole other debate - donut or bagel?!!! I am sticking with donut! These donuts were a huge hit and I will definitely be making them again! The cheddar and apples work brilliantly with the pistachios! So yummy and surprisingly filling! After one I was complete content until dinner.

You can eat these donuts by themselves, top with tahini, or use to make a sandwich! The extras freeze really well, but there were no leftovers from this batch!

Recipe

Ingredients

1 tbsp chia seeds

3 tbsp water

1/2 cup flour

1/4 cup almond flour

1/4 tsp nutmeg

2 tbsp nutritional yeast

1/4 tsp baking powder

1/4 tsp baking soda

2 tbsp honey

1/3 cup milk (or any dairy free milk beverage)

1/4 cheddar cheese, grated

1 apple, cored and grated

2 tbsp pistachios, chopped

Instructions

  1. Warm oven to 350 degrees. Prepare donut or muffin tin with non-stick spray.

  2. In a small bowl mix together chia seeds and water. Set aside.

  3. In a large bowl mix together both flours, nutmeg, nutritional yeast, baking powder and soda.

  4. Add chia seed mixture along with honey and milk to the flour mixture. Stir until just combined.

  5. Fold in apple and cheese to dough.

  6. Fill prepared donut tin with chopped pistachios.

  7. Top pistachios with dough mixture and place in oven to bake for 15-18 minutes. Just until donuts have turned slightly golden.

  8. Allow to cool and enjoy!

Note: This recipe can be used for muffins too. Just add pistachios to the top of the muffins before baking.
